Olive Poem - A Drop of Art: Single Estate Organic Extra Virgin Olive Oil (gourmet) 500ml BIO

We have always considered the traditional cultivation of olive trees in our region as an act of poetry. This is the idea behind the name of this extra virgin olive oil. A poem that cannot be read but can be felt with the senses, through its gold-green color, rich fruity, bitter, and pungent taste, and its distinctive, complex bouquet of aromas.

The love and care of the farmers for the trees and the land in Laconia, Peloponnese, are extraordinary. Therefore, we have chosen the best practices of their traditional cultivation methods. However, we believe that art should evolve. For this reason, we have integrated current knowledge and modern equipment as key elements that allow us to achieve the best results from our traditionally cultivated olive trees.

Poetry of Traditional Agriculture

In the Laconia region of the Peloponnese, Greece, olive cultivation has long been a significant activity. This is no coincidence, as this area has excellent soil and climatic conditions for olive trees. Over the centuries, some unique, special olive varieties have evolved and adapted to these specific conditions. We resisted the trend of replacing old trees and varieties with new ones, a practice that currently dominates modern agriculture and leads to higher productivity.

We have preserved the olive trees in our grove for centuries and have started planting new ones, while not importing any trees from other areas or nurseries. Each of them sprouted naturally in our grove. We relocated them to appropriate positions and grafted these wild trees with tissue from local Koroneiki and Myrtoelia varieties (trees already present in the grove). This practice brought about trees born and raised in this particular soil, well adapted to it.

We do not use any chemicals. We give our trees a bit of goat manure as natural fertilizer, plus compost made from branches when we prune them. We do not water our trees, as they are well adapted to the dry climate of the region.

Poetry of Olive Oil Production

Undoubtedly, in terms of potential for olive oil production, our olive trees have unique DNA, our area has an excellent microclimate, and our soil has unique characteristics. However, even though the area is one of the best in the world for olive trees, this alone is not enough to produce one of the best olive oils in the world. To achieve this, we turned to science and technology. Well educated in seminars and through independent study of scientific literature, we have integrated the latest innovations into our methods.

Still, this was not enough, so we equipped our company with the most modern technology. We now operate our own small olive oil production unit to have full control over the best, most modern process. We produce our oil in a vacuum at a maximum temperature of 25°C, mixing (malaxing) the olive paste for a very short time.

All these processes ensure the best preservation of valuable substances in the olives, and also raise the potential to produce a higher quality product.

Poetry of Post-Production Process

The first step is the coarse filtering of the olive oil to remove solid residues, so their enzymes do not cause undesirable reactions. Then the oil is transferred to steel tanks, which are filled with inert nitrogen gas to prevent degradation of valuable substances that occur in the presence of oxygen. The olive oil is stored under these conditions in a carefully controlled temperature until bottling.

Before bottling, the bottles are thoroughly cleaned with purified air stream. Immediately afterwards, they are filled and sealed under vacuum using non-refillable caps.

All these processes, along with a high amount of polyphenols (antioxidants) found in our extra virgin olive oil, contribute to the longest possible shelf life of our valuable product.

Reception and Critique

Our "Olive Poem" has been enthusiastically received by olive oil tasting experts, winning gold medals at major international olive oil competitions.
