Krocus Kozanis saffron is one of the most valuable spices in the world, obtained from the dried stigmas (pistils) of Crocus sativus flowers. Grown exclusively in the Kozani region of Western Macedonia, it is distinguished by its intense aroma, deep colour and exceptional quality, confirmed by the PDO protected designation of origin. It is a luxury product, valued in cuisines around the world for its taste, aroma and health benefits.
Cooperative and community
Saffron stigmas from Krocus Kozanis are produced by the Cooperative of Saffron Producers of Kozani, which brings together several hundred local farmers from villages around Kozani. The cooperative ensures that local cultivation methods and traditional harvesting techniques are preserved – each stigma is harvested and selected by hand, then dried under controlled conditions. Knowledge about crocus cultivation is passed down from generation to generation, and the cooperative itself supports the local economy, cares for the environment and promotes sustainable agriculture.
Cultivation and harvesting
Each crocus flower produces only three delicate stigmas. Flowering lasts for a very short time, usually in October, so harvesting takes place every day at dawn, by hand, as soon as the dew has disappeared. The collected stigmas are separated from the flowers and dried at a low temperature to preserve their intense colour, aroma and natural nutritional values. It takes up to 150,000 flowers to produce 1 kilogram of dried stigmas.
Quality and certifications
Krocus Kozanis saffron has the EU PDO (Protected Designation of Origin) label, which guarantees its authenticity and highest quality. It is regularly tested for its content of colouring agents (crocin), aromas (safranal) and flavouring substances (picrocrocin). The high content of these compounds translates into intense flavour, colour and health properties.
Culinary inspirations
Saffron stigmas are used in cooking as a luxury ingredient – not only for their taste and colour, but also symbolically. Just a few stigmas are enough to give dishes a unique aroma and golden colour. They are perfect as an addition to:
- risotto, paella and rice dishes – they give a golden-yellow colour and subtle aroma,
- desserts – puddings, ice cream, cakes and creams – as a sophisticated flavour and aroma finish,
- infusions and teas – a few strands steeped in hot water create an intense, rich drink,
