After three years of intensive experimentation and work on the extraction process, we present the unique Pamako Experimental Edition set – three organic extra virgin olive oils, each pressed from the same Tsounati variety, from the same olive grove, but harvested at different times of the season. Oil from one grove, three different faces
The set includes three 250 ml bottles, corresponding to the three stages of ripening of the Tsounati variety in the producer's grove, located in the Selino mountains in the Chania region of Crete. Each oil was pressed at a different time – from October to December – allowing you to experience the full spectrum of aromas and intensities resulting from the time of harvest.
- P – early harvest (October): intensely green, spicy, high in polyphenols, with a distinct bitter-herbal profile.
