Production and origin

Pathos Olive Oil is an ultra-premium organic extra virgin olive oil from Crete, produced in the mountain olive groves at the foot of the Psiloritis massif, in the Korfes region (Heraklion). It is made from the Koroneiki variety, prized for its exceptional quality, stability and naturally high polyphenol content.

The family-run Kavalaria Estate has been farming organically for generations, with full respect for the environment, the soil and the unique microclimate of Crete – one of the world’s most important regions for the production of extra virgin olive oil.

Harvest and extraction

The olives are harvested at an early stage of ripeness (early harvest), which yields an oil with an intense aroma and a high content of bioactive compounds. Pressing takes place using a modern continuous system at a controlled low temperature, which preserves the full nutritional and sensory qualities.

The oil meets the requirements of the European health claim EU 432/2012, which indicates the presence of natural polyphenols that help protect the body against oxidative stress.
