Physis of Crete 0.2 is a cold-pressed extra virgin olive oil in the culinary and salad category — with very low acidity not exceeding 0.29% and a mild, balanced flavour profile. This product has been created for consumers who do not prefer oils with pronounced characteristics — such as intense bitterness, sharp spiciness or strong green fruitiness — but are looking for a versatile, delicate oil that complements everyday dishes without overpowering their flavour.

The oil is made from the Koroneiki variety, with olives hand-picked in the Lasithi region of eastern Crete and cold-pressed on the very same day they were picked from the tree. This technique is key to preserving the oil’s full health and aromatic benefits — it minimises the time between harvesting and extraction, limiting the oxidation and fermentation processes that reduce the product’s quality.

Culinary and salad grade — who is this olive oil for?

Physis of Crete 0.2 is an olive oil “for everyone” — a safe choice for families, home cooks, those just discovering Mediterranean cuisine, as well as for those who use olive oil in large quantities and are looking for excellent value for money. Its mild profile means the oil won’t overpower delicate dishes — fish, fresh salads, poultry, roasted vegetables — whilst bringing the full flavour of the Mediterranean to them.

Acidity — an important, but not the most important, parameter

Low acidity below 0.29% (with the EVOO limit set at ≤ 0.80% under EU Regulation 2022/2104) is a testament to the exceptional purity and care taken in the production process — Physis of Crete 0.2 maintains this parameter consistently from season to season, at a level more than twice as low as required by law for the Extra Virgin category.

It is worth noting, however, that acidity cannot be assessed by taste, smell or appearance — it is the amount of free fatty acids, the level of which can only be verified by a chemical laboratory. It is measured immediately after harvesting, and if stored or bottled incorrectly, it can increase over the course of a year. This is why an authorised distribution chain with controlled temperature and storage times is so important.

Other chemical parameters (K232, K268, ΔK, peroxide value) confirm the highest quality of the Extra Virgin category every year — all values are significantly below EU limits. The fatty acid composition and the absence of pesticide residues are also verified by the accredited ANALYTIKON laboratory in Agios Nikolaos.

Origin — Kritsa, one of the oldest villages in Crete

The producer’s family comes from Kritsa — a picturesque mountain village situated at an altitude of approx. 375 m above sea level, less than 10 km from Agios Nikolaos. Kritsa is one of the oldest continuously inhabited settlements in Greece, with a history dating back to Minoan times, surrounded by ancient olive groves growing on stone terraces.

The village is famous for the 13th–14th-century Panagia Kera church, which houses some of the finest Byzantine frescoes in Crete. Traditional narrow streets, hand-woven textiles, local kafenia and views of Mirabello Bay make Kritsa one of the most visited places in eastern Crete.

The higher altitude of the Physis of Crete olive groves (200–500 m above sea level), combined with the cooler mountain microclimate, results in a milder, more balanced sensory profile of the oil — in contrast to oils from low-lying coastal groves, which are typically more intense.

The modern facility at the “Olive Oil Park” — a free educational tour

The producer operates a modern 1,200 m² bottling plant for olive oil, olive paste and table olives, located on the road from Agios Nikolaos to Kritsa. The facility operates as the “OLIVE OIL PARK by Physis of Crete” — a tourist and educational attraction open to visitors.

As part of the free tour (Free Olive Tour), guests can see the entire olive oil production process: from the olive harvest, through stone mills and modern decanter centrifuges, to bottling and labelling.
