Physis of Crete lemon and orange blossom honey is made from nectar harvested in spring in the citrus groves of eastern Crete. It is light, golden and delicate – with a distinct hint of orange blossom and lemon, reminiscent of a Cretan spring.

Flavour and uses

It has a mild, floral-citrus flavour that is not overly intense, so it does not overpower other ingredients. It is excellent in tea (particularly green and herbal tea), lemonade, pancakes, porridge, yoghurt and for sweetening desserts. Like most citrus honeys, it crystallises relatively quickly, retaining its light, creamy colour – this is a natural characteristic, not a fault.
