Physis of Crete thyme and pine honey combines two of Crete’s most distinctive floral sources: the nectar of wild thyme growing on the mountain slopes of eastern Crete and pine honeydew. The thyme gives it an intense, herbal aroma and an amber colour, whilst the pine lends it depth, a slightly resinous note and a less pronounced sweetness than in classic nectar honeys.

Flavour and uses

A distinctive, herbaceous and resinous flavour, with a long, slightly spicy finish. One of Greece’s most distinctive honeys – perfect with Greek yoghurt and nuts, with cheeses (feta, graviera, manouri), on warm bread, in tea and in meat marinades. Thanks to the pine honeydew content, it crystallises slowly and retains its liquid consistency for a long time.
