The COOC Seal is a mark of quality awarded to olive oils that meet both chemical testing and sensory evaluation requirements in order to be recognised as genuine extra virgin olive oil from the California region of the USA.
- Laboratory tests: the producer submits samples to a laboratory, which analyses quality parameters (indicators of proper harvesting, pressing and storage of the oil).
- Sensory evaluation (Taste Panel): the oil is then sent to a recognised tasting panel for a blind evaluation – it must be fruity and free from defects (defects may indicate, among other things, a problem with the quality of the olives, the pressing process or storage).
- Mechanical process: no chemicals or extreme heating may be used in production – extra virgin olive oil is produced exclusively by mechanical means.
