  • Einkorn Wheat
    Einkorn wheat, also known as small farro, is the very first grain cultivated and used by humans more than 10,000 years ago. It is a typically Mediterranean species still found in Italy, and for millennia, it was a dietary staple alongside emmer wheat for farming communities. Through spontaneous cross-breeding with other Triticum species, einkorn became the ancestor of most wheat varieties known today – including emmer, durum, and common wheat. This is why it can truly be called the “father of all wheats.” The cultivation of einkorn nearly disappeared in the Bronze Age (4–5 thousand years ago), when higher-yielding and easier-to-grow varieties became more popular. From a nutritional standpoint, einkorn is particularly rich in antioxidants, and its delicate, soft gluten makes einkorn flour easy to digest and ideal for baking light, fine-crumb baked goods.
  • Emmer Wheat
    Cultivated since around 9,000 BC, emmer wheat (also known as farro or emmer) was, alongside einkorn, a staple in the diet of farming societies for centuries. In addition to typical cereal properties such as high starch content and a good level of protein (it contains gluten, but it is less robust), emmer also features beneficial fiber content, unsaturated fats, and vitamins. Notably, it contains higher mineral content, a thicker aleurone layer, and is rich in beta-glucans. Its low glycemic index makes it particularly recommended for athletes, sedentary individuals, and people with diabetes.
