Rosemary is an aromatic herb native to the Mediterranean region, commonly used in Mediterranean cuisine. Rosemary is used to make an infusion. As a herb, it is used with meats, particularly game, and in sauces. It adorns Mediterranean gardens with its small, blue flowers, whilst its intense aroma imparts a fresh scent.

The name ‘rosemary’ derives from the Latin words ‘ros’ – meaning freshness – and ‘marinus’ – meaning a fresh sea breeze. Rosemary can thrive in its natural habitat without watering, drawing moisture from the sea.

Uses:

• It has analgesic and stimulating properties
• It is used to treat depression and nervousness, despite the fact that it raises blood pressure
• When used externally, it stimulates circulation and has a warming effect
• It relieves spasmodic stomach pains, has a cholagogue effect and improves digestion
• Inhalations help to combat a runny nose and sinus infections

Pregnant women and people with high blood pressure should avoid consuming it.

Preparation: Pour boiling water over a teaspoon of rosemary. Leave to infuse, covered, for about 10 minutes.
